Root ROM Structure Question

I am somewhat of a noob to flashing roms, as I have only run two since I rooted a while back. I got my flashing feet wet with DroidMod, but outgrew that rather quickly and moved on to AdamZ's Smoked Glass. Fell in love with it and haven't flashed anything else since, although I've reflashed it a few times changing the various options.

This brings me to my question. I would love to try some of the other roms and move on to the Clockwork Recovery method, but I love how AdamZ lets you completely customize every option of his rom. Are any of the other roms structured like that? I've read through the various roms, but none really talk about whether or not you select what you install/remove. I'm kind of picky and there are some features I like that some don't, and vice versa. I'd rather not have my whole install decided for me.

Thanks for any advice.
 
Bugless Beast (ESE53 ROM like AdamZ's ROM) lets you add or remove apps and other features via scripts after install.

JRummy's Remix for Cyanogen does basically the same thing with scripts...but that's a modified version of Cyanogen 5.0.5.3 (my personal favorite ROM...but you start talking about different recoveries, etc...some noob's might not be comfortable with that...you'll be running it eventually though :D)

I'm norried about different recoveries at all. :) I have already flashed to Clockwork once, created a backup of my Smoked Glass, then flashed back to SPRecovery. That part doesn't scare me at all. Want to try Cyanogen but want to be able to pick & choose my preferences.

Then I personally recommend JRummy's remix. It is customizable, looks good, and has the full functionality of CM 5.0.5.3 PLUS things like HQ YouTube vids by default, etc.
