Please help. I need to download Gingerbread's stock dialer.apk since I (stupidly) deleted mine. Can't seem to find it. Thanks.

I'm assuming you're rooted?

Find a rom for your device, if it's slightly better known then google for cyanogenmod 7 and your phone. Download the .zip, and open it up in an archive viewer. Navigate to /system/app and extract the dialer.apk.

I'm guessing you didn't do a nandroid backup before you started deleting stuff?

If your in a pinch, you can download one of the replacement dialers from the playstore.
