Stable vs. Nightly?

Could someone please explain what "nightlie" (as in cm10) means? And is this opposed to a "stable" version of the particular ROM? I haven't tried the Cyanogen 10 yet, and in Goo Manager it lists nightlies and a stable one.
How do I know which ROM I want to flash?

And one more question, please. How do I know when I need to flash Gapps along with a particular ROM?

A nightly is enhancements, additions, fixes etc. to the stable version.

The Dev will usually tell you if you need gapps with their ROM. You will usually need to flash gapps with cyanogen Roms. If you're doing nightlies of the same ROM, normally you can just wipe the cache and dalvik. If you only do that instead of a clean install on nightlies, you don't need to flash gapps again.

If you ever flash a rom and don't have the Google apps, then you probably need to go back and flash gapps.
