Official 2.1 and rooted 2.1 v3

Well the software and radio are the same so my guess would be no because when they ping ur phone to send the update it will check back as the same version but you can do the roll back method posted in the root subform
if you installed any of the 2.1 leaks you cannot roll back. there is no roll back method for these versions yet.
the question is weather or not it will even pull up the OTA and no one knows at all, its up to the software to determine if the ota download is a newer version or not. there is no pinging from verizon in this process. its merely a simple rsync protocol.

The "software" is different in the OTA than in the v3 leak. It has added features and additionally is a different size than the current leak. It doesn't just look at the radio and the version number. There are other factors involved. There is no way to know for sure either way until the update itself comes out so stop telling people no.

If I'm completely off my rocker and you're right, the leakers will be able to flash the new version just like they did the leak, no problem.
