How do I back up all my apps and etc before doing a hard reset

I did a hard reset (not rooted) and my apps were still under "my downloads" in the market to reinstall (I think this is only true the first time you go back to the market though). I have Astro file manager which backs up apps but I didn't need to use it. If your contacts are saved as "google" contacts then they'll sync back up when you're prompted to set up your gmail account again (same with calendar stuff). Pics/music/ringtones are all saved to SD so you won't lose those. You will need to reassign ringtones to your contacts though. All settings/customizations will need to be set back up, like alarms, volume, screen layouts. The only thing that took a long time for me to set back up was my customizations in Handcent because I have individual settings for a lot of my contacts. Otherwise, it was fairly painless and actually a nice time to mix things up a little from how I had it.
