I am using the Pixel Launcher so I am not 100% sure but if you hold on the home screen to show the widgets and settings... can't you disable Google Now within those settings? On the Pixel Launcher it's a different setup.
There's actually a big redesign for the Google Feed rolling out (independent of Android 8.0), but it hasn't made it to any of my devices yet. My understanding is that the only way to disable the feed with the new layout is to actually disable each individual category ( Menu > Customize, I think).

I disabled a bunch of stuff under customize and google now is still on my home screen, I can't believe they make it impossible to turn off google now, I guess the only way is to remove it with root.

If I recall, the first time before you first use it... Doesn't it ask if you want to enable it? If so, maybe clearing cache/data for the launcher would work?

If you goto your main phone Settings -> Apps & notifications and find your launcher (Google Now or Pixel Launcher?). Once you are looking at the App info screen for your launcher, click the blue gear icon on the top, to the right of the app name. From here, do you see an option for "Display Google app" with an on and off toggle? This is the setting for the Pixel Launcher.

I've seen something similar to "no gear icon" but it was on a new setup of 6.0. The person who bought my Moto XPE used the official Moto setup that came with the phone.. It put all of the things you would look for in a normal plain android setup elsewhere. They were there, but organized more like a Samsung phone.Permissions were the big thing that changed places.
I told the kid to just plain ignore Moto when she set up her g5+. She did, and all settings appeared in normal places.
