I have rooted my phone and I want to upgrade android to 6.0 or 7.0 version.
The Samsung Galaxy S5 is now 7 years old and no longer supported by Samsung.

The last official update for the S5 series is Android 6.1.

Depending on your phones model of S5 and its CSC code, ( see #1.2 and #1.8 of 42 Galaxy S5 models - Dummie Guide), you can download and install Samsung stock firmware from SamMobile by downloadind it and using Odin PC suite and the instructions shown on the site. If you install stock Samsung firmware it will unroot you and you will need to root your phone again.

Alternatively, you could install a custom ROM such as LineageOS, which is still updated and is currently on Android 10 and running the latest Android Security patches. Just download the ROM for your device version and install it by following the instructions on their site.
