Actually I was wrong. It didn't skip songs but did go back in the playlist...
However after months I found my player: Museek. I mailed to the author about adding a skipping songs feature and he did implement it

Pressing headset button twice skips the song (with a little exercise)

I did get it to work although it did not work very well. I tried museek but that didn't work at all.

What did not work? Skipping songs with headset?
You have to have a delay between the double click on the headset button. It's due to hardware limitation. Tested with Milestone and works relatively good.

Nope, could not get it to work at all. Luckily, I found something that I like even better. Droidshuffle does exactly what we are talking about. 2 presses to skip, three to go back. Works with the built in media player.

Hey, check out executive assistant, a neat app that you can uses anumber of ways, widget, welcome screen or lock screen. Pretty cool, has tabs to see unread sms, emails, facebook, twitter etc. Plus on home lock screen tab you can add widgets, so you can have music control. eg. default music, tune wiki or the one i prefer pure music widget (great skin options).

Using spica and Android 2.1. Default Music player in 2.1 has option to control Music player from headset.
* one click - play/pause
* two clicks - skip/next

Also, bTunes has a lockscreen music control as part of the media player.

I have the Jabra Halo & the Moto S9, both have controls that work well, when the phone is locked.

i was looking for something that would do this. btunes handled it perfectly. also allowed me to filter for music in a specific directory... the stock player kept including my ringtones

Loaded bplay, and it won't see any of my music. Stock music player sees it ok.

Go into options and make sure that it is pointing to the directory on your SD card where you've stored your music. I can't remember if the option to have it only look in that directory is turned on or off by default. I have my turned on, FWIW, but all my music is in the 'standard/default' directory that it suggested.

the path is also case sensitive... I ran into that same issue, my folder was called music but I had entered Music
