I have a new Droid X and find the Verizon Vcast media manager isn't compatible with 64 bit Windows 7. So, how do I get pictures and video transferred from my X to the PC?

There are plenty of ways to get such files onto your PC, and none of them require root.
Alternatively, I think you can use Virtual XP Mode for Win7 (available at no additional charge) to install the 32 bit software and drivers.
- Connect the phone in mass storage mode and simply copy the files (best way)
- Open an individual file and check out the "Share" menu (better for one-offs)
- Take your MicroSD out of the phone and copy the files off of it
- Connect via Media mode on USB (I haven't, so I'm not sure about the limitations of this method)
- Transfer the files to a SAMBA share, FTP server, Picassa or Dropbox.
