toying with the idea of hacking up the stereo/dashboard area of my car (2003 alfa romeo 147) and fitting a tablet in there for all my ice needs.

but i know nothing about tablets, so has anyone got any suitable recommendations?

obviously needs to feature :-

wifi (for loading of media onto memory card as it'll be fixed into the car.)
compatibility for 16gb or so memory cards
GPS.
fm tuner.

atm i have a single din slot (7"x2"), but underneath is a pair of cupholders which can be dumped to make a double din slot (7"x4") with a little bit 'to play with' above and each side if needed.

i'm planning to power it permanently off the cigarette lighter, which is only ever used to charge my htc desire when i'm using it as satnav.

With an app like car dock (lots of alternatives too...this is the one I use) you could easily get away with a resistive screen also. It can be done pretty cheap this way. My recommendation, start with velcro. Make sure where you put it allows the screen to be visible in direct light. My comments on your requirements below.

wifi --pretty standard
compatibility for 16gb or so memory cards --also pretty standard
GPS. --look into BT GPS pucks
fm tuner. --not common that I have seen. I'd stick with a head unit and get one that uses BT unless you also want to deal with amps not having a remote turn on and all the other little things that not having a HU will bring.

Can't remember if it was here or XDA, but I did see that. So...yes.

There's an app called Bluetooth GPS. It uses your phone GPS so you can share it with a tablet.

Back to topic, this is an interesting idea and I always wanted to do something like this.

Bluetooth is a must when picking your tablet. I know it's pretty standard like wifi but some tablets don't have bluetooth enabled. I wonder if there is a mount for tablets similar to LCD TV wall mounts. Especially the kind that has the extendable arm so you can tilt the LCD. That would be sweet!

The options seem to be growing, it used to be just scosche or a custom fabrication. RAM POD Universal Vehicle Mount

been processing this path myself. tablets are going to smash carPCs in the sense that people are going to WANT to do this, as opposed to the select people that ATTEMPTED to add a carPC.

currently, feature wise, the Xoom is the best option available. the accessory lineup that Moto plans to release already makes the path as easy as possible. the problem is there are very few cars that will accommodate a 10" anything in their dash.

looking at my vehicle, the nav screen already fills up the width of the dash. putting a 10" table there will cause it to stick out and over-hang. however, i'm starting to wonder if I could live with something like that. if a custom mount could be fabricated to secure the tablet enough so that it didn't look like it was an after-thought, it might be worth doing.

there's lots of potential for what could be done and just think about what you could do after starting the fabrication process. if you have more than one vehicle, you'd just need more than one DIN kit and swap the tablet between them.
