To prevent apps connecting to the internet just uncheck the background data option in Accounts & Sync. It flashes up a warning that some apps may still use the internet but I didn't have any issues when I was in Spain for 2 weeks. Just returned to UK from France and had same questions before I went. If you are sure that you will not want to get online then do as Furious Duck suggested and also under Settings>Wireless and Networks>make sure that Mobile Network is unticked and under Mobile Network (set options) that Data Roaming is unticked and Data Roaming sound is ticked. This means that you won't be charged for mobile data as it will be off but if it goes on accidentally it makes a loud noise.

As above post, if you do want to get online check with your provider before you go. You need to activate any deal once you are there and keep mobile internet off as I described when you're not using it. Enjoy your trip!

ditto to all the above, one thing i would say most european shopping malls have some form of free WIFI , also there is always a Mcdonalds somewhere in the world with free WIFI no need to go normally reaches the car park.

I am with Bt Broadband and while i was in Spain i found many free hotspots using BT Openzone which did suprise me even in Alicante airport.
