Is there a way to have apps on home screens without the names underneath them? Not folders, just the apps themselves?

I don't know about the Touchwiz launcher, as I don't have a Samsung, but some third party launcher apps (such as Go Launcher) can do this.

I don't think so with the stock launcher, I'm not sure though since I haven't had that on my phone in a long time.
If you have updated to ICS I recommend Nova launcher, if not I recommend LauncherPro. Both of those will give you that option

I second LauncherPro if you want to make that happen. Plus, it's just a good all-around launcher.

Both are great options (I preferred LauncherPro, but both are great)... Until you upgrade to ICS. Then Nova and Apex are the only real options. Those are the 2 that started with ICS and built on it. ICS is such a major update it is almost like a completely new OS.

Yes, you can remove the labels from the icons with the app desktop visualizer.
