Root [Verizon] Thinking of rooting

So I've been thinking about rooting my S3. I'm no stranger to rooting, and i haven't rooted yet because the S3 pretty much has almost everything i wanted out of rooting in the stock OS, smoothness and notification toggles and plus a few extra features.

However, today, My sister got the jelly bean update on the Gnex i traded her for her upgrade to the S3 (because i was almost certain that the S3 would get Jelly Bean before the Nexus XD) and now I'm kind of jealous. i wanted to hold off on rooting because i hate having to start all over after rooting and unlocking, and also i didn't want to start all over again to unroot and relock when the JB update hit.

So i have a few questions, is it possible to root and unlock the Stock OS without starting over?

And is there a way to unroot and relock? i have not seen anything about unrooting. Is it possible to do so without erasing everything?

Figured it'd be a long shot, but thought i'd ask anyway.

oh and one more thing, should i try out the touchwiz ROMs? or stick to something more stock like CM10?
 
There is a root method that doesn't require you to flash and start over, I used it and it worked perfect. Phone had to reboot a couple times as part of the process, but when it was done, I had full root access and everything was like I had it before. And unlocking the bootloader is as easy as installing the app from Play and clicking unlock, shouldn't require any kind of reset. I haven't done it yet though, so I could be wrong... but I don't think I am.

anyone have any experience with unrooting? Hope it's nothing like the Droid Incredible, boy that was task >.<

S3 is my first android and I rooted after doing the research and watching videos. overall it was easy, I was just nervous because it was the first time.
If your not new to the forums you know you've gotz tons of help and resources here, XDA, Rootzwiki. the step by step instructions are amazing.

Edit: forgot to mention the most important thing. I unrooted with the thread instructions, just as easy.
