My Galaxy SIII used to random reboot with its original firmware shortly after an OTA update (the 'MF1' Verizon OTA). it also tended to on any custom ROM (dalvik and 200+ apps and games caused an 'OOM panic') and also tended to on custom ROMs whenever you had Play Store set to auto-update (fixed by disabling auto update and doing them manually). i only did it on purpose if i were flashing or backing up ROMs. more recently i reflashed the stock TouchWiz and everything's been fine and stable. (either my out of box software was buggy or whoever redid the stock had fixed whatever was wrong as now my battery life is excellent and so is performance and stability--also better cell signal)

Yeah i went back. tried many custom ROMs and there was always something missing or not quite working as i wanted (the last KitKat ROM got terrible signal quality and i couldn't make a phone call. not really cool to have a super fast, fluid phone if i can't use it as a phone or use data anymore!) i also really missed Smart Stay and S Voice (i'm probably the only one who likes them, but i do like them, plus i do like TouchWiz's nature theme, being a nature/deer lover and it's a bit skeuomorphic and no matter how used to flat ui i get, i just can't get into it in the long term, and i couldn't get Smart Stay to work, S Voice FC's on custom ROMs, and i like multi-window. i also am planning on a Galaxy Smartwatch and it only runs in TouchWiz. the only other option is yet another Pebble, which to me is vastly inferior and only black and white, and is too expensive for the quality. the Galaxy Gear is just too Tony Stark to miss out on. oh, sure, i can wait until 2015 and get the Note 4, and hope Galaxy Gear even exists, but i hate missing out on cool stuff and i bet it won't be available then.

Is turning your phone off, and back on, the same as holding the power button and volume down button at the same time until it shuts off and comes back on?

Not quite. Using the buttons is a forced reboot as opposed to a graceful shutdown. The latter closes all open apps and ends services one by one until they are all closed. The former will simply terminate power without regard to the state of apps and services. You could possible corrupt data, settings or files doing this, so devices should only be shut down this way if they get hung up. It's pretty much the same thing as pulling out the battery while the phone is on.
