Help Keeping emails on server

I've just acquired a Moto G, and there are one or two email options I can't find.

The most important is being able to delete emails from the phone to delcutter the inbox after I have read them, but leaving them on my email server, so that I can deal with them when I'm back home.

This was an option in the basic set-up on my last two phones.

Guidance would be appreciated.

I do, in fact, have it set on "never".

However, despite that, the phone does delete it from the server, so it can't be subsequently retrieved by my desktop computer.

I've been to my ISP's webserver to check that it really has gone..

My previous phones were an HTC Wildfire S,then a ZTE Blade III, and there was no problem with them.

Well this is a problem because all weekend I've been deleting messages and it looks like they're not going to download when I get to work!

I also miss the option to only fetch the headers and then download the rest manually which is good if you receive attachments or lots of junk mail and don't want to use up all your data allowance.
