Root Help wanted: root tour guide for a super noob!

Thanks for all of your help in advance.

What i want to do: root my old LG Optimus V to use as a "tablet" for the kids. I previously bought 2 tablets for them through "puzzle pieces" (provide low cost tablets and monthly apps for kids w/autism) but in a month one has a cracked screen and other power button is broken. Phone is much sturdier.

Can i totally eliminate the phone feature after rooting, including 911 calls? (Had a problem w/this already.)

I want to keep a web browser, app store, camera, video, Netflix, youtube, ebook reader and amazon mp3 player. (I also have an mp3 album saved to the device from amazon that i can't lose. Kids listen to it to go to sleep every night and i'm not sure that it is available for purchase anymore.) Everything else can go, unless needed for the phone to work right.

I also would like to set it up that it does not automatically connect to wifi without a password. Kids are 5 and 8. No reason for them to connect to anything w/o me or my husband connecting them first.

Can someone help me sift through all of the links in the all things root file and lead me step by step through this?
