Can WearOS watches work without Google?

I am considering trying the G Watch out (it just came out in Best Buy but is currently sold out) but i also don't like Google anything on my phone or tablet. the Google Apps tend to glitch out or stop working 50% of the time with some vague error message (9 out of ten attempts to use Google Voice Commands end with 'cannot reach Google at the moment') and also tend to eat up battery and poll location/data services too often using my data plan up. you can't turn sync off without it turning back on by itself later. as such i have removed all the APKs for Google Apps from my Samsung devices and keep them pure Samsung and use Samsung Apps over Google Play.

So, if i get a G Watch will it work without Google? or must i put the apps back for even basic functions such a weather? or does the watch have its own wifi? i have no idea because Google in their usual fashion are vague about everything. is there an app i need to install to communicate or does it just work?

My main reason for considering the G Watch is because my Gear 2 weather clock refuses to update the weather on its own despite resetting it and my phone both and ensuring it's set to refresh hourly. the widget on my phone also won't refresh unless i manually tap the symbol for it. i've troubleshooted it as far as i can without success and the weather is important to have next to the time, but it's not helping me if it is showing cloudy and 68 degrees when i know it's well above 80 and sunny. that and the nicer UI and always-listening voice commands. basically this will be a work watch and i'll likely use my Gear 2 on weekends when weather isn't so important.

Wear Os is completely dependent on apps created by google. The real question is if software developers can create apps that do the same thing as the Google apps. Wear Os is open source, but can't be modified in any way. Its all a long ways off. These watches require you to use a compatible bluetooth headset in order to make and receive calls. As Google Glass is gets added to the picture, I think it will be almost impossible not to use Google apps.

I kinda found that out when I bought the thing. it doesn't require Play Store (thank god) but it does need things like Google Now and Maps active on your phone to get the cards to show.

I did find out that while it works best with Hangouts and the Nexus phone dialer (need root to sideload that onto a Note 3) it does provide basic texting/calling functionality through the ones Samsung uses, so you don't need to use Google's versions of messaging/calling apps.
