Can it be done? US Cellular says no but is that just a "we won't"? I know it's old but it seems to have a much better camera than what I replaced it with.

The relevant part from ljfnky's link:
"Eligible 1X and 3G devices that are not listed in the table above may be unlocked at a local U.S. Cellular location or by contacting U.S. Cellular Customer Care at 888-944-9400."
Also your phone is CDMA only, no GSM, so it can't be used on any AT&T or T-Mobile carrier. The Verizon side of Straight Talk might be able to activate it.
