When will somebody figure out how to defeat this "security" crap in Lollipop and Marshmallow and let us root?

It just depends on the device/carrier 
If rooting is important to you just buy a device with an unlockable bootloader - and don't buy one through a mobile carrier who insist on locking these things down. Plenty of people do root devices with Lollipop, Marshmallow and even Nougat.
Honestly, that is the best way. I do not want a "rooting app" to work on my devices, because if there are exploits such apps can use to gain root access then malware can also use them. There are good reasons for patching things like that.
