How do you change home-screen icons?

Do you have a 'Personalization' option in 'Settings' on your phone? Do you have HTC Themes available to you? I just found that much looking about online for your model of phone. I don't even have Nougat yet, still on Marshmallow on a Samsung S7 Edge. So do you want a 'guide' to your HTC 10 or to Nougat? I'll try to help you find either or both. Here's something from a review on greenbot about your phone's theming attributes:
"The ability to extensively theme your phone is my favorite feature in the One M9, and it’s back with the 10. In fact, it’s better than ever. You can install existing themes, and new “Freestyle layouts” let you put apps anywhere instead of sticking to a 4x5 grid. You can also link “stickers” to apps to avoid using icons altogether. It’s the most polished theming experience to ship with any major Android phone, and it’s a lot of fun."

As for your launchers, I have Nova, though I haven't used it much yet, and downloaded more icon packs than I'll ever use so I know with that one, you can change them anywhere you want to - and you don't need a whole 'theme' to do it, just the icon pack you want. And for a 'guide' to that, just typing in Nova Launcher user's guide in a search engine brought a lot of returns

FWIW, with Oppo phones there's a whole load of nice icon sets, themes, etc.
