Does the torque pro app give me specific oil temp, trans temp and coolant temp gauges?

And yes it does. You may or may not have to get a plugin for your specific vehicle, but those are available from within the app itself

Well it depends if those data parameters are available in your specific vehicle. Oil temp in particular, not all engines have a sensor to measure it so it may be either an interpolated value or just non-existent. If a data item is present in the ECU but not part of the standard OBDII paramter set it may be necessary to add the parameter set for your vehicle as Mike mentioned. If that is not possible you may have to find the PID value for it to add it manually.

Those items are read from the vehicle, if they aren't showing up then they are not present or not supported and I don't think you can add them manually. Not all vehicles will send that info, especially older ones.
