I am trying to root my Google Pixel XL, which is running Android P beta build PPP5.180610.010. I have all my apps and data and stuff backed up, but you can't restore a backup to an older version of Android. If I unlock the bootloader, will it downgrade to android O?

Root Will Unlocking Bootloader Downgrade from Beta?

Unlocking the bootloader includes a mandatory wipe - a factory reset. That will erase all of your apps and user data, but does not impact the system files. Factory resetting does not downgrade to a previous OS so neither does unlocking the bootloader.

You'll be on the same version of Android that you are currently, and yes, you'll be able to restore backed up data.
I just recently had to get off the 8.1 beta as my phone had started boot-looping at random intervals and I'd run out of other ideas. In the end I went as far as installing a system image with roughly the same version number as the beta and hoping for the best. Worked out okay for me.

If it makes you feel better, when I got my current phone I went through all kinds of set-up and restoring of data and such before I remembered that unlocking the boot loader would force a wipe of the phone. So annoying.
