Lines of text on all apps used to be same length

They used to, now they are all different lengths, one line can be longer or shorter then another by a lot, is it a setting?

A line has a limit on amount of characters it can have if "text wrapping" is not enabled (can't be enabled in a messaging app).

Lets say the limit is 25 characters.
As example, you just typed a 23 character line.
Now you want to add the word limit at the end of that line.
The word limit has 5 characters, so it will not fit and be added to a new line.
Now if your new line ends with 25 characters total, then it will look longer than the previous line.

In order for all lines to be the same length, a word that exceeds the character limit at the end of a line would have to be split across the 2 lines by a hyphen (ie. lim-it). This behavior is usually seen in text editors as an optional feature in the settings.

Remember I mentioned that it's a feature in "text editors" not in messaging apps. The behavior you're experiencing is normal and cannot be changed.

As you can see there are huge empty spaces are you *sure* this is a feature, if you would be so kind as to include 2 examples, preferably from different s8s that would be nice, side note, can I revert from OS 8 to 7?

That looks like left justified text, which is normal for just about all messaging apps I've seen The right margin will always be ragged with that. Quite frankly I've never seen any messaging app that offers full justification for both margins of a text block, with things like proportional spacing and auto-hyphenation. And have only seen that in full-blown computer word processors and desktop publisher software. Where typographic alignment options might be important.

I can't provide examples from an S8 of course. as I don't have one of those. But I do have an S7, and text in messaging is the same on that.

mikedt is correct. This has always been the designed behavior of the Galaxy S8's messaging apps (from Samsung and Google) and every other texting app I've ever used, including iPhone. I'm not sure what you are remembering, but it's not a standard texting app.
