i have the same problem but i was rooted and i started to have problems with my s2 so i went back to a stock rom so i could update via kies to fix...
i dont have this problem and i have not heard of the problem before you should get a replacement S2
the SGSIIs stock camera has panorama mode
camera app-->settings (cogwheel)-->shooting mode-->panorama
im on KH3 and putting the system volume down works for me..try updating and try my method again
whats your kernel version?...you should try to update it via kies or odin
all you have to do to stop camera sounds is
settings->sound->volume->set system volume to zero..job done
