Yeah iPhones use micro sim cards..and I don't think you would have to change your data plan, but I'm not sure on that
To turn it off go to settings > wireless and network> mobile networks> toggle use packet data on/off
Yes, it will take more juice for the radio to find a signal..I just turn off data unless I need it honestly and it will save you more battery...
