It's not really possible because even on a device that DOES have that option in the OS (like Samsung), there are still ways to restart or power it off without knowing the lock. Basically as long as you hold the Power button long enough, the device will force restart itself
If it's a decade old, it's definitely not getting updates any more.
And most apps require the OS be no more than 5 years old, in order for them to run and work

No, you can't access or back up anything in the device's current state. It wouldn't be a very secure lock if there was a way to do that, because the entire purpose of the lock is to PREVENT access to all of that.
You can remove all carrier bloatware by flashing the firmware of the G970U1, which is the exact same model but sold directly by Samsung, network unlocked and bloatware free. That'll not only remove the startup splash screen but all of AT&T's preloaded apps

You can't restore from a Google backup via anything other than Google's official restore process.
But, you can use a 3rd party app to backup and restore texts - "SMS Backup & Restore" is great, You can even give it a date range to back up from
Some Samsung models need to be plugged into a PC via USB, in order to get to the Android Recovery menu.
So install the Samsung USB Drivers if you don't have them already, and then repeat the steps while you have it plugged in
