Root after root

I am not the tech savviest but I was able to root. After root do I go back into settings/apps/development and uncheck USB Debugging and stay awake

You can if you want, as far as I know there is no real harm leaving them like that though.

USB Debugging just allows your PC/Mac to communicate with your Droid through adb when it's plugged in via USB. And Stay Awake just prevents the screen from turning off when the phone is plugged into a power source. Both are personal preferences, and won't affect anything if you turn it on or off, unless performing a task that requires them (like anything involving adb or apps like PdaNet).
