In Applications Manager and apps running I seem to have a quite a lot, do I need all these running

Software Update and Settings I would think yes.

    Samsung Link - MAPService - Google Services - Google Services No. 2. - Exchange Services - Maps (twice) - Samsung Push - S Suggest - SecPhone - S Voice - Video Hub - Remote controls - Simple Alarm - Google Play -

there are others which obviously need like Samsung Keyboard and Antivirus

not sure if need any of the others

    I have a Galaxy S3.

You don't need software update actually, neither do you need exchange service, the maps that has the shortest running time, S Suggest, SecPhone, S Voice, Video Hub, or Google play. There's no need to have an antivirus, but if it helps you sleep better haha. Not sure about SamsungPush or Remote controls

On a GS3 don't worry about RAM. I don't and it has never lagged. I have noticed though that camera and my flashlight app cause a huge CPU load in standby so I just swipe them away in the recent apps to close them.
