as a new Android user, Galaxy S3,
is there a difference between how the home and back buttons work?

Hi jake and welcome to the forum. To answer your question, there is quite a difference between them. The home button takes you back to the home screen, but leaves the app running in the background. You can access this app again by holding the home button on your s3 to open up the recent apps menu and clicking it. The back button takes you back a page/menu in what ever app you're using. If you reach the beginning of the app and push it again, it will take you out of the app and actually close it.

You're welcome. This is one thing a lot of new android users tend to ask about, even more so if they are coming over from an iOS device. If you have any other questions, don't hesitate to ask.:)
