Bare bones data use while abroad ?

I'm hoping to take full advantage of the reasonable Euro data bundles from T-Mobile while in Europe.. 3, 10 & 20mb add-ons.

I have an HTC Desire and will only want to pick up emails and surf (using Opera as it's super efficient on data) and occasionally tether to a laptop as a modem to download emails.

Questions:

How to almost totally shut down data usage other than my chosen actions? Much data transfer in the UK seems to leak into many of the apps on the handset. Is there a "switch off all data" master setting that I can use and then simply opt in to one browser, one email app and the tether?

I use a data counter (3G watchdog) - does this in fact chew up data in the process?

Do speed tests use much data?

Any top tips would be hugely welcome.. Many thanks in advance!
