Can I edit the name of the apps that I added to the home screen? I have added some shortcuts to the Home screen and I would like to edit the names, haven't figured out how to do that yet.

If you use a Launcher, such as Nova, you can edit App names, as well as App Icons.

You can do as mentioned above, if you use a launcher, or you can download "Desktop Visualizer" (Play Store) and try that. If you want to leave it blank (without a name), you will have to add at least an space. If you want to try that and want more detailed steps let me know!
