I am trying to remove some of these stock apps like cityid and amazonmp3.

What I did was created a folder on my SD "deleted" and I was copying the applications I didnt not want from /system/app

So I moved amazonmp3.adk and cityid.apk to the deleted folder. When I look in the app folder they are gone but when I look under my apps from the home screen they are still there. So I reboot and when i go back into /system/app the apps are mysteriously back.

    Any help?

You can't move them while your phone is booted up since the /system directory is in use. What you have to do is boot into recovery, mount /system, and then use adb to move them to your deleted directory.
