My kitty has learned the art of opening the lower cabinet doors. Nothing quite like coming home from work to find her sleeping in a casserole dish. I guess it's time for some child proof latches for the doors... something I never needed for my children.
Depending on how your cabinets are arranged and if you have handles/knobs, you may be able to get by with just a couple of large rubber bands or small-diameter bungee cords, or even just some stout cord. Stretched between handles/knobs, it will keep the kitty from getting in, then when you get home you can easily pop it off and not have to deal with those latches every time you want in a cupboard. The only trick is be sure it's tight enough she can't get in, because otherwise she could get trapped, and that's no fun for anyone.
Another alternative -- if you have the space -- is to secure all but one cabinet and let her go in that one (obviously cleaned out of everything you don't want to have to wash again). As you know felines like places they can sneak in and hide. so that would keep her very happy. Depending on your cabinets you might be able to just put what you need in a plastic storage bin with a lid in the cabinet, then she can go in there and snuggle up but not get anything dirty. Once she makes such a cabinet her "secret place" you could probably then stop securing the others.
Good suggestions. I used the rubber band trick already. Double doors at the sink and bathroom vanities is a do not enter area for her. I'm afraid she might get into some cleaner or something toxic. Washing the dishes before use is not the end of the world but losing kitty would be a real bummer. She seems to have a favorite cabinet to hang out in. I'll see what I can do to accommodate.

So far the fridge is safe. But, I'm quickly understanding that this house and everything in it belongs to the cat. We are allowed to use some of the stuff on occasion.

No sir. I've had many dogs and birds through the years. I've had my fair share of fish and even had a run with hermit crabs. This is my first cat. Was born in my shed and befriended my wife. So... we are learning to bow deeply and often.
Ah, now I got it. Well, you'll note I previously said "had" cats rather than "owned" cats...because they own you. If you're kind to them, they will allow you to share their home with them. Otherwise...well, hopefully you don't learn about THAT!
So far.. so good. She does what she wants and we try to do what she wants.
Train it. I don't know how but I've seen it done IRL and on the Beverly Hillbillies!
Cats are cool pets but people really don't understand them.
