Are there any ROMs that are customizable and can be more then just blue or red? Custom lock rings or even change the battery up?
Or can be themes by the UOT kitchen??

I'm not sure about the kitchen.

Have you checked out KnightWolf's skins? They're easy to install and change a lot of the way the phone looks, save the notification bar. The ROM ZR3D has a lot of custom skins, too.

As for complete customization, you could pull apart themes from other ROMs by extracting the images out of the apk and jar files and then replacing the stock ones in your phone's files using Ninjamorph. But that's tricky to do and not something you can rush. Plus you need to NANDroid backup, as things can go south quickly with that if you're not careful.
