Say you click on an mp3 file. It'll ask you which media player to use, and gives you a check box if you don't want it to ask again next time.

If you do that, how do you change it to another player? That is, how do you unassociate it?

If you go to Settings >> Applications >> Manage Apps >> (The media player that opens by default) and hit 'Clear Defaults' it will ask you again the next time you open one of those files.

That works for any time you pick a default app for something.
