Does anyone know of a way to change the hotword command "OK, Google" to a custom prompt phrase? I know there is/was an app called "Open Mic for Google" that allowed this, but from what I understand, it no longer works. "Ok, Google" doesn't really roll off the tongue, and I'd really like to change it.

This might be worth trying. Personally I have not tried it.
Go to Settings/Lock screen and security/Secure lock settings/Smart Lock
in the Smartlock screen tap on Trusted voice. In the window that opens up use the "Retrain voice model", possibly after deleting the existing voice model. In the retrain process use whichever would make sense to you. Not sure if it will work but worth a try.
