If you reflash the stock software, everything will be back the way it was before you deleted anything.
If one is available and you plan on using a custom ROM, you usually can decide what size Gapps package to install.
Hind sight being 20/20, it's better to just disable preinstalled apps from the stock ROM than to delete them. They reside in the system partition and removing them will not give you any extra space in the user data partition.
If you happen to have a custom recovery installed, and you made a backup of your unmodified system, you should be able to restore it.
