In Contacts how can you show only ones with a phone number on Galaxy S6

I don't have an S6, but if there is such an option I'd expect to find it by pressing the menu key while viewing the list of contacts (i.e. in the Contacts app's settings, but as on most phones these vary with what tab you are viewing I'd pick the contact list tab first).

Contacts>Contacts Settings>Display Options > Only contacts with phone numbers (check box)

I have Lollipop 5.1.1 on an LG G Stylo so I'm not sure what options show on your phone
