Is there a way to control all volumes (ringer, notifications, etc) with just the one volume control on the side of the S7? As is, the volume control buttons only change the levels of the ringer..

Actually way the system is set up, the volume control button will control the volume associated with the activity on the screen. If you're using Bluetooth it will control Bluetooth volume. In music apps it will control media etc. etc.
When you tap on the volume button, look to the extreme right of your slider and tap on the icon on the extreme right just above the slider, a window will open up showing your different volume settings that can be adjusted while that screen is open.
