is it possible to create easily shortcuts so that with one click I will be able to:
- call someone
- send sms to someone
- redial
etc

Yep. Long-press anywhere open on your home screen and you should see the pop-up. Choose "shortcuts" and you have all those options, and more.

this is good, but what about redial? or call someone and open speaker?

For redial, there is an app in Google Play called redialer. The second I'm not sure what you're asking. You mean turn on speakerphone as soon as you place a call? You might try Tasker for that one.

1. For messages and calling, you can use any contact widget. Samsung's built in one is called "buddies" and lets you put your contacts onscreen. One tap asks you if you want to call or message.

2. For redial, not sure about your phone, but if I call someone and they don't answer or is disconnected, there appears a redial button onscreen, so not sure what you want here.

I want a shortcut that will call a specific number and enable the speaker automatically after starting the communication with that number

I also would like a shortcut that when I click it, it will call the last dialed number

This "sort of" gets you there. I just have Widgetsoid2 dial shortcuts to my fav contacts... if I want to redial I hit it again.
