You should be able to long press and select the text you want, it also depneds on what browser and messaging app you're using too.

It sort of depends on where you're trying to do it...are we talking within a text input field? In a browser? Somewhere else?

In the stock browser you long press on text until a magnifying window comes up. Initially it will select the individual word that you pressed, but it will also provide a little blue pointer that you can use to select more...you almost just have to play around with it to learn how to do it. For text input boxes, when you long press choose "select text" instead of "select all" then you can select by moving your finger across the text you want.
