I recently bought a Samsung Galaxy S10 plus with android 10. I wanted to upgrade to android 11 via Odin but found that in Download mode it shows "SM-G975N" but in phone settings, it shows "SM-G975F". Binary also shows "custom". Now I am confused about which firmware to use. Should I use "SM-G975N" or "SM-G975F" firmware?

why not just do the over the air update? just go to settings>software>check for software update.....no update then there is no need to use odin to flash a firmware update that does not exist for your phone.

i would also check what the model number is on the box the phone came in.....if you still have it.

The SM-G975N is the Korean model.
The SM-G975F is the European model.
The radio bands are different for both markets.
