I only had my Droid for one day before the 2.1 upgrade arrived from Verizon. Since then, the originally elegant scrolling has become very jerky. Not a big functional problem, mostly just cosmetic. Disappointing nonetheless. What gives?

I did not notice this. Do you have a lot of active apps running, or just too many apps?

I am in the same boat. Mine worked just fine before the update and now it is really laggy and jerky. I cannot use the emulators that I paid for because the 2D rendering is absolutely horrible now.
