Help Email and FaceBook Check Interval

I have a strange problem with my phone - I have set both my email app and Facebook to "never" check automatically. I do this because I prefer let these apps check when I open them up. Anyway for the last couple of days both these apps revert back to checking every hour. This usually occurs at night because my phone starts to beep and chirp indicating a new email or FaceBook entry. I have reset them back to never several times now, however after a few hours they go back to 1 hour. Is there some other app or function that has global control over the check interval for all apps that is doing this, or to I have a gremillin in my phone? Thanks.
