Email & Message contacts

I have my contacts set up to list and display Last Name, First Name and this works fine when opening the Contacts program. If I try to select a contact while in either email or messaging, the contacts are displayed first name , last name. Anyone have this problem or know how to enable contacts to show last name, first name in all applications. Thanks
