I'm thinking about getting the Spica.
If I install the Kitchen rom, will I be able to install the official Froyo later on - if it ever becomes available that is?
Also - if I install the imaginable official Froyo, what are the chances that I will be able to get Multi Touch installed (that requires a rooted Froyo, right)?

Yes you can install the kitchen ROM and when and if Froyo becomes available you'll be able to install Froyo. If Froyo comes out multitouch will very likely be ported to Froyo.
