You could go looking for an apk file to reinstall it, or you could try QuickPic (free at Play). Once I installed that I stopped using Gallery.

I also use a free play store pic viewer instead of the gallery. You might also make certain the gallery app is truly gone. You may have just removed the shortcut. Either check the all app drawer or just long press an open spot on a screen and see if gallery is a choice to be had. Good luck.
