I was planning on doing a hard reset tomorrow when I get my evo just to be certain its completely factory, but im wondering what all it will delete. Does it keep all the sprint apps, browser, marketplace and the like, or am I going to have to re download those again somehow, and if I have to re-download where do I get them from? Thanks.

You can not get rid of all the crAPPS that are preloaded onto the phone, without rooting it, so don't worry about having to re-dowload those. The only thing a factory reset will do is erase all contact info, customization, downloaded apps and such. It will reset the phone like it was fresh from the factory. It will delete all custom settings and downloaded info.
