Haven't flashed in a while, ROM questions

I'm currently running the Bugless Beast v0.3 on my Droid, but I've noticed that there are a lot of new ROMs in the few months I haven't checked out the forums. Any suggestions on what to try? I want to try something new, as my current ROM seems to be locking up from time to time and moving slow.

Also, a question about flashing: I remember how to flash a ROM (formating all the partitions and installing with recovery), but how should I handle my app data? I know all my installed apps are backed up to my Google account, but what about the settings and various configurations for them? Do I need to use Titanium Backup for that?

I just nandroid backup my current setup/rom, then load the new rom. Many folks will say wipe the data before loading, but I've done the opposite and haven't had any issues. Your apps and settings will stick doing it this way. If you run into a wall, restore the nandroid backup and try again with a wipe if needed.
