I've tried the Droid-X Clockwork Recovery, Deodexed Rooted, Froyo'd method a few times now and each time when I reboot after restore my phone just sits on the Motorola screen

I've installed the file into a folder in clockworkmod/backup
    Did a backup with recovery
and restore with the folder I made

    What am I doing wrong

ok so you downloaded Droid X bootstrapper and CWM recovery
opened bootstrapper and hit the top button and got "success"
Opened CWM and hit CWM recovery at the very top to makie sure you have the latest
    went to download roms
    selected stock
and selected the one you want.
back up current rom and when it restarts it doesn't go into recovery?

The initial version of Bootstrap works great with 2.1. It is still available online, but it might not be in the market.

So this means I have to install 2.2, then use the recovery method to deodex and root it, correct?

I just uploaded the Bootstrap i had on mine to mediasomething here so it worked for me and it should work for you.

And if you want 2.2 rooted and deodexed i would just follow my steps laid out previously and install the 2.2 rooted ROM. then to deodex it is a snap. Do a search for the deodexed file.

Ok so I followed your directions, it backup the files fine and then when it went to install the update it aborted

    few of what it said

assert failed : apply_patch_check (alot of numbers and letters)
    E: error in (file location)
    (Status 7)
    Installation aborted
and says recovery log was copied to sd card

    Any help on this issue?
